Vegetable poha with peanuts
Flattened rice tossed with peanuts, curry leaves and lemon, a light and fragrant breakfast.

Ingredients
- 70 g Poha (flattened rice)
- 20 g Peanuts
- 40 g Green peas
- ½ chilli Green chillies
- 3 g Curry leaves
- ½ tsp Mustard seeds
- ¼ tsp Turmeric
- ¼ tsp Salt
- ½ tbsp Sunflower oil
- ¼ lemon Lemons
- 5 g Coriander
Method
- Rinse the poha in a sieve under water for a few seconds, then drain and set aside to soften.
- Heat oil, splutter mustard seeds and curry leaves, then add peanuts and peas and cook 3 minutes.
- Add turmeric and chilli, then the drained poha and salt; toss gently over low heat for 4 minutes.
- Finish with a squeeze of lemon and chopped coriander.
