Drumstick sambar
A generous, no-onion sambar built almost entirely around tender drumstick and toor dal.

Ingredients
- 55 g Basmati rice
- 45 g Toor dal
- 100 g Drumstick (moringa pods)
- ½ tomato Tomatoes
- 1¼ tsp Tamarind paste
- 1¼ tsp Sambar powder
- ¼ tsp Mustard seeds
- 2 g Curry leaves
- 1 tsp Asafoetida (hing)
- ¼ tsp Turmeric
- ½ tbsp Sunflower oil
- ¼ tsp Salt
Method
- Cook the rice until tender; set aside.
- Simmer the toor dal until soft and mash lightly.
- Add the drumstick, tomato, tamarind, sambar powder and turmeric, and simmer 15 minutes until the drumstick is tender.
- Heat the oil, splutter mustard seeds, curry leaves and asafoetida, and stir into the sambar.
- Season with salt and serve hot over the rice.
