Portuguese bean stew
A hearty kidney bean stew with carrot, potato and smoked paprika.

Ingredients
- 220 g Kidney beans (tinned, drained)
- ¾ carrot Carrots
- 80 g Potatoes
- 100 g Chopped tomatoes (tinned)
- ½ onion Onion
- 2 cloves Garlic
- ¾ tbsp Olive oil
- ½ tsp Smoked paprika
- ¼ tsp Salt
Method
- Warm the oil and cook the onion, carrot and potato for 8 minutes until starting to soften.
- Add the garlic and paprika and cook for a minute.
- Stir in the tomato tin and beans, cover with a little water and simmer for 15 minutes until the vegetables are tender.
- Season with salt before serving.
