Ladies finger fry with rice and dal
Okra fried until crisp-edged with turmeric and chilli, a simple no-onion Tamil favourite.

Ingredients
- 50 g Basmati rice
- 25 g Toor dal
- 200 g Okra
- ¼ tsp Mustard seeds
- ½ tbsp Coconut oil
- ¼ tsp Turmeric
- ¼ tsp Chilli powder
- ¼ tsp Salt
Method
- Cook the rice until tender and simmer the toor dal separately until soft; set both aside.
- Heat the coconut oil in a wide pan, splutter mustard seeds.
- Add the okra, turmeric and chilli powder, and stir-fry over medium-high heat for 10 minutes until crisp-edged, stirring only occasionally.
- Season with salt.
- Serve with the rice and dal.
