Millet vegetable kurma
A wholesome millet and vegetable kurma in a mild coconut-cashew gravy, no onion needed.

Ingredients
- 60 g Millet
- 40 g Green beans
- 30 g Green peas
- 40 g Cauliflower
- 25 g Fresh coconut
- 6 g Cashews
- 1 tsp Ground coriander
- ½ chilli Green chillies
- ½ tbsp Coconut oil
- ¼ tsp Turmeric
- ¼ tsp Salt
Method
- Cook the millet in twice its volume of water for 20 minutes until tender; set aside.
- Simmer the green beans, peas and cauliflower with turmeric and a little water for 10 minutes until tender.
- Grind the coconut and cashews with water into a smooth paste and stir in with the coriander powder and green chilli; simmer 5 minutes.
- Drizzle with the coconut oil.
- Season with salt and serve with the cooked millet.
